Vegetable Soup
2 lg cans tomato juice
1 large can tomato sauce
2 lbs each corn, green beans, broccoli, frozen
1 lb carrots, frozen
3 lbs ground chuck, or other cuts of beef
8 Wylers bullion cubes, beef
2 qt water
Salt pepper to taste
Basil to taste
Place all vegetables in large stockpot. Add tomato juice,
water, and tomato sauce. Place over medium heat. While
this is getting warm, brown the beef, (if not ground
chuck, use 1/4 tablespoon olive oil). When cooked, drain
off excess fat. Place meat into the vegetable mixture.
Stir frequently to prevent burning, add seasonings.
Simmer for two to three hours, allowing the bullion
cubes to fully dissolve. Best flavor is achieved after
refrigerated overnight, then reheated. Feeds a hungry
group of firefighters!!!
