Probably one of the easiest and quickest soups you'll ever make. Double or even triple the recipe if you're cooking for a crowd. This soup is also great with your own special twists...try adding chicken, Italian sausage, mushrooms, or spinach. A sure crowd pleaser.

Tomato-Cheese Ravioli Soup

(Total Time: 13 minutes)

1 14.5 oz. can Stewed Tomatoes
1 14.5 oz. can chicken broth or vegetable broth
1/2 tsp dried Italian seasoning
3 cups frozen cheese ravioli or fresh cheese tortellini (about 12 oz.)
1 small zucchini, sliced
1/4 tsp freshly ground pepper
Parmesan Cheese

Combine stewed tomatoes, chicken or vegetable broth and Italian seasoning in a large saucepan. Bring to a boil. Cover, reduce heat, and simmer 5 minutes. Add ravioli, zucchini, and ground pepper. Bring to a boil. Cover, reduce heat, and simmer 7 to 8 minutes or until pasta and zucchini are tender. Serve sprinkled with parmesan cheese.

Can also try variations of soup by adding chicken, spinach, mushrooms, or any other vegetables you like.
