Mushroom Soup
1/4 cup finely chopped onion
8 oz. fresh mushrooms, chopped
3 Tbsp. butter
3 Tbsp. flour
2 cups chicken broth
1 cup half and half
salt and pepper
Sauté onion in butter or oil then add mushrooms.
Cook 7 minutes. Stir flour over mixture. Add broth,
stir and bring to boil. Reduce heat and simmer for 5
minutes. Pour half and half into soup and heat until
hot. Do not boil! Salt and pepper to taste.
