Ever wonder how restaurants make their mashed potatoes so rich and flavorful? The trick is in the cheese...
3 lbs red potatoes
2 garlic cloves
1/4 cup - 1/2 cup milk
4 TB margarine
1/2 package cream cheese
Salt and pepper to taste
Chopped fresh chives
Peel potatoes and cut into 1" cubes. Drop potatoes and garlic into large pot and fill with cold water just enough to cover potatoes. Bring to boil, cover and simmer until potatoes are fork tender (20-30 minutes depending on how big the pieces are). Drain potatoes and garlic and put into large bowl. Warm milk in microwave and begin to add to potatoes in small amounts. Use a hand masher to mash the potatoes and cooked garlic. Half-way through mashing, add remaining ingredients. You can add more butter or cream cheese if desired, depending on how rich you like your MPTs. To keep warm, you can put into an oven safe dish and double bake in oven until ready to serve.
