Grandma's Potato Dumplings

1 cup mashed potatoes
2 beaten eggs
1 cup flour (plus 1/2 cup reserved)
1 tsp baking powder
salt

Mix ingredients together and add additional 1/2 cup flour until sticky and dough-like. Hand roll into balls and drop into boiling water. Boil uncovered for about 10 minutes or until they float. Cover and simmer for an additional 15-20 minutes. Serve hot with melted butter, with peaches or apples, or also great in chicken soup.
