Italian Pesto Paninis

1/2 lb. sliced deli ham
1/4 lb. sliced genoa salami or pepperoni
1/4 lb. sliced mozzarella or provolone cheese
Sliced red pepper, thin
Sliced onion, thin
Handful baby spinach leaves
1/4 cup sliced pepperocini (reserve some juice)
Italian Panini Bread
Garlic Pesto Mayonnaise (see below)

Spread slices of panini bread with pesto mayo. Top with meats, veggies, pepperocinis. Drizzle small amount of pepperocini juice on top. Top with cheese to keep ingredients together. Place other piece of bread on top and place on hot panini grill. Close lid and grill until golden brown.

Garlic Pesto Mayonnaise:
4 TB mayonnaise
1 clove garlic, chopped roughly
2 Handfuls of baby spinach OR handful of fresh basil
Salt and pepper to taste

Place all ingredients in blender or cuisinart. Blend until smooth.
